Pizza Alla Carbonara

This is the third day of my Pizza Challenge and may I introduce the Pizza Alla Carbonara! I took my Spaghetti Carbonara recipe and turned it into a pizza : ) I was so pleased with myself until Danielle looked it up and found out that I was not the first to think of this twist on Spaghetti Carbonara, oh well it was still delicious. For more information on Pizza Baking see this Post: Pizza 101
Ingredients
2 pizza doughs homemade or frozen & defrosted
2 large onions chopped finely
1/2 teaspoon sugar
a lot of fresh ground black pepper
olive oil (enough to cover the skillet)
1 pack bacon (1 pound)
1/2 cup white wine or chicken stock
1 egg yolk
1/2 cup Parmesan Cheese
1/2 cup Mozzarella Cheese
Directions
Preheat a stone in a 550 degree oven on the bottom rack.
Fry or bake the bacon, drain, and cut into 1 inch pieces, set aside. Reserve 1 tablespoon of the bacon fat and add it to  to a hot skillet adding enough olive oil to coat it.
Add the onions, salt, and pepper, and cook until soft and golden. Pour in the wine and cook down for 2-3 minutes.
Remove from heat and add the egg giving it a good stir.Add the bacon.
Spread out your doughs on 2 parchment lined pans.
Divide the onion/bacon  mixture on to both pizzas.
Add the Parmesan and then Mozzarella cheeses.
Bake for 3 minutes, remove the parchment and continue baking for about 5-8 more minutes or until the cheese and crust are golden brown.
