Roasting Garlic in Muffin Tins


I saw a method of roasting garlic where it is first wrapped in foil and then placed in a muffin tray to roast and I thought, "Why even bother with the foil?" So I tried it turned upside down resting in the olive oil and it came out perfetto! So this is my new roasting method for garlic from here on out.
Ingredients
whole garlic bulbs 6-12 depending on size of muffin tin
olive oil
Tools
muffin tin 6 or12 cup
Directions
Peel the outer skins off the garlic bulbs
Cut off the tops
Spread a small amount of olive oil in each muffin tin cup and place each bulb cut side down
Bake at 350 for 35 minutes or until golden brown and soft when pressed. These keep nicely in a closed container in the fridge for 1 week.

What a great idea! I just throw mine in a tortilla warmer, sometimes. Can't get enough of that garlic!
