Orzo w/ Garlic Oil Feta Cheese & Basil


I love Orzo and it always makes me feel like a child when I eat it! When I was little my Mom used to make us orzo in broth whenever we were sick and to this day it is what I crave when I am sick or tired, a big bowl of carbs always seems to do the trick ;  )  This recipe I  threw together for lunch one afternoon and voila almost instant fast food that is not only healthy but also very tasty........ which is why I love to announce--  Pastasciutta --to my family almost every night!
Ingredients
16 ounces Orzo pasta (I like Italian imported pasta best)
1 cup feta cheese crumbled
1/4 cup quick garlic olive oil: Add 2 crushed but whole garlic cloves to 1/4 cup Olive Oil and bring to a simmer, simmer gently for 3 -5 minutes, do not brown. Remove garlic and add a pinch of salt.
a few Basil Leaves torn
Directions
Cook pasta according to box adding a good pinch of salt to water. Reserve 1/2 cup of water to add to pasta if too dry.
Drain pasta and add to a serving bowl pour over the oil, add cheese and basil leaves tossing to incorporate.
If it is too dry you can add a splash or 2 of the reserved pasta water.
