Italian Style Cabbage and Tomatoes "Cavolo Verza e Pomodori"

 I love the Italian language because its such a fun and kind of silly, childlike language. Take this recipe for instance Did you know Cavolo (The Italian word for cabbage) is also a mild expletive in Italian, kind of like the the word "Heck" ? And Cavolo literally translates as Holy Cow! There are so many other instances like this many of which are slightly "dirty" but don't worry I will spare you : )
 This cabbage recipe is so creamy and delicious you will think you are eating a bowl of creamy risotto!
Ingredients
1/2 pound savoy cabbage 
One 15 ounce can whole tomatoes or 1 pound fresh plum tomatoes
olive oil
1 garlic clove
2 medium onions
1/2 cup dry white wine
salt and pepper
3 tablespoons butter softened for adding at end
2/3 cup grated Romano or Parmesan Cheese for topping
Directions
Core and slice the cabbage into 3-4 inch strips (about 2 cups) or open a bag of shredded cabbage (coleslaw)
Slice onions into very thin rings and mice the garlic
Chop the fresh tomatoes or crush the canned with your hands
Heat olive oil in large saute pan that has a lid and and saute onions until soft and browning.
Add cabbage and garlic and mix together, add tomatoes and season.
Turn up heat high and pour in the wine, allow to come to a boil.
Add cover, lower heat to simmer and cook for 35-45 minutes.
After it is cooked (It will be very very soft)
Take off heat and add butter stirring rapidly, then add cheese stirring to incorporate.
Serve with more cheese if you like : )
 This tastes so good served alongside a tender slow cooked pork roast!

This sounds yummy.. and I actually have some cabbage to use up. :)

Loved the little story with the word, cabbage. Who knew?
