Rustic Sausage Pie (Torta Rustica Salsiccia)


This is my own creation looking for something satisfying yet affordable for my hungry teenage boys and as my son said it's like a "Calzone meets Empanada". I made 2 pies thinking leftovers for lunch tomorrow but my family devoured them both up leaving only 2 pieces behind!
Ingredients
1 pizza dough: homemade or store bought
olive oil
oregano
coarse kosher salt
Filling:
12 ounces Spicy Italian Sausages (about 4 links)
1 onion chopped fine
1/2 cup tomato sauce
olive oil (enough to coat pan)
oregano
Directions
Preheated oven to 420 Cut your dough into 2 pieces with one being larger than the other: making a bottom and top piece.
Grease the pan with olive oil. Press the large piece of dough into a spring form pan allowing the sides to go up the sides slightly.
Roll out the second piece so that it is large enough to cover the top of the pan. Set aside.
Remove the skin from the sausage. This is done easily by removing the skin while the sausage is slightly frozen.
Heat up a pan to a medium high with a little oil and saute the onion until soft.
Add the meat and saute breaking it up just until done but do not over cook. Add sauce, oregano,  and cook for just a minute or two allowing the sauce to reduce if it is too runny.
Dump the mixture into the pan leaving a half inch border.
Place the top piece on and fold the bottom edges over this piece. Seal by pinching together. Cut a small slit into the top.
Brush with olive oil and sprinkle on the oregano and coarse kosher salt.
Bake for 50 minutes or until golden brown.
Allow it to cool slightly before cutting into it.

Is that at 500 degrees? Must have missed that.
