Griddle Pizza!

Griddle Pizza!
 
This is my grddle version of Pizza Fritta or Fried Pizza which is actually the true Italian Calzone. When my Mother was in Naples, Italy getting married to my Father she quickly became addicted to this delicious street food. How can you resist I mean come on pizza folded up in a wrapper something to nibble on while you walked the streets of Italy : ) This is great for very hot days when you don't want to heat up your house with the oven.

Ingredients
pizza dough recipe for 2 pizzas cut into 8 slices
marinara sauce
1/2 pound mozzarella

The cheese melts....
Parmesan cheese
fresh basil leaves
olive oil
Optional Toppings : anchovy fillets, roasted bell peppers and or onions sliced thin, goat cheese, capers, olives......
After your pizza dough has risen once punch it down and cut it into 8 pieces.
Now roll them out into 8 round flat pieces about the size of a medium burrito and stack them in between parchment covered with a little flour.At this point I like to set up a "station" of all of my toppings, the dough, and my griddle and olive oil.
Next, heat up a griddle to the highest heat or a cast iron pan to about 400.
Place the dough in the pan and cook until golden brown on the one side and then flip.
Now add some olive oil, the sauce, cheeses, and any other topping you want on to one side only and allow it to melt while the other side cooks until golden brown.
Now flip one half over and allow it to cook until the cheese is all melted, just another minute or two. Serve right away!
