I used Trader Joes chili pepper sauce! |
This is my Uncle Manny's recipe for quick easy spicy shrimp! My Uncle Manny was actually my godfather and was a half Italian half Spaniard NJ city cop and he was just as spicy as his signature dish back in the day! My sisters and I used to argue over who had the best godparents and hands down I always won. I have many funny stories about my Uncle Manny such as the time he and my father stole a local football mascot and drove to NY at top speed in his cop car with the mascot in the passenger seat and the sirens going off. Or the time he and my father mismatched babies, my father picked up the wrong sleeping bundled baby from the crib and went home with her after a night of too much sangria. But my favorite memories are of him smelling like musky cologne and looking all dapper in his police uniform before heading out to work. He was such a patient, kind, and lovely man and I was very proud of getting the best godfather of all!
Ingredients
2 pounds raw frozen or fresh shrimp with heads removed and tails on
favroite hot sauce
garlic powder (not garlic salt)
salt
1/4 cup melted butter
1/4 cup olive oil
bib or iceburg lettuce leaves
Directions
In a large pan mix the melted butter, opil, salt, hot sauce, and garlic powder, tasting to see what amount of salt and spice you desire.
Place all the defrosted or fresh shrimp in the pan and coat well.
Place under the broiler and cook until pink, turning once half way. Leave the door open and watch the whole time it can burn quickly!
Serve the shrimp over bib or iceberg lettuce pouring the juice over top as well and a side of good crusty bread.
