As it is nearing the end of Summer it is also nearing the end of fresh basil from my garden : ( so I am making pesto dishes like crazy to get my fill! Pasta Alla Ligure is a recipe that comes from Liguria, a small coastal region of north-western Italy also known as the birthplace of Pesto. Even though it seems kind of strange with the whole 2 starches in one dish it works and it is very easy to prepare since the green beans and potatoes cook in the same water as the pasta.
Ingredients
1 pound tagliatelle, thick spaghetti, fettuccine, or linguine
Liguria, Italy |
1/2 pound green beans
4-6 small boiling potatoes
olive oil
Directions
Prepare pesto or buy some, you will need a whole small jar.
Start water and add plenty of salt.
Peel and dice potatoes
Add potatoes to boiling water and cook uncovered until potatoes are almost done about 8-12 minutes test with a fork.
Add green beans bring back to boil then add pasta cook until pasta is done.
Drain and make sure to reserve some pasta water to the side.
Immediately add the pesto and a little pasta water and toss to coat. Add more pasta water if needed drizzle olive oil on top and serve right away.

This is utterly shocking! I have always lived under the rule that one cannot serve pasta a ;-)nd potatoes together. I love both, but blindly followed the "rule." Now I feel as if you've given me permission to break the rule and dive into a meal of pasta AND potatoes! Thank you!
